Enchiladas de Mole - Another Special Mexican Dish...
I've been covering the special dishes offered for Cinco De Mayo day by "The Missing Burro" restaurant in Bangkok. So far in the last few days I've covered.

But, today it is time to showcase the Enchiladas de Mole.
ENSHILADAS DE MOLE'
What is Mole?
An exquisite concoction of beef stew which has been boiled for hours and reduced to a thick, slightly sweet, rich and fragrant chocolate-tinged sauce which is slightly sweet. This has become the signature diesh of the the states of Puebla and Oaxaca which made it famous.
Here you can see the mole drizzled over 2 fresh beef enchiladas and served in a hot-pot with Mexican rice. It was gooey, oozy and thoroughly delicious!
