Coconut-battered Fried Banana.
This is another simple yet delicious dessert; Fresh, bite-sized banana pieces, fried and covered in a thin coconut batter & ice-cream.
If done correctly the banana should still be firm and not mushy inside. The outer layer should be a little crispy but still soft as it is here. Then dust it with some more dessicated coconut, drizzle some chocolate and a bit of icing sugar. Serve it with fresh ice-cream and you have one of my favourite desserts.
The combination of textures and flavours of the banana, coconut batter and ice-cream all compliment each other and it tastes amazing.
