How To Prepare a Delicious Nigerian Fried Rice with Chicken

Hello guys,
I will like to inform you on one of the greatest best delicacies you can find to eat and enjoy if you ever in Nigeria but instead i will show you how you can prepare it to enjoy in your home at your respective countries by giving you an easy to follow steps on how to prepare the dish.

Ingredient:
500g long grain white rice
500ml Chicken or Turkey stock
100g cow liver
2 large carrots
half cup of Green peas
1 large green bell pepper
1 onion bulb
2-3 tablespoonful Curry Powder
1 tablespoonful Garlic Powder
½ tablespoonful black or white pepper (optional)
2-3 cooking spoonful vegetable oil
2 stock cube flavored seasoning (optional)
Salt
Steps:
• Start by seasoning your chicken/turkey in a pot with:
1 teaspoon thyme, 1 teaspoon curry, 1 stock cube, onion slices
Add water to the level of the chicken and cook the chicken for about 10 minutes till it is done.
The stock is what you get after you finish boiling the chicken with the seasoning that is the remaining liquid in the pot. Set the stock aside in a bowl.

After wards fry your chicken or grill depending on you. Then set aside

• Wash and place the cow liver in a pot filled with little water, add seasoning cube (optional) and salt to taste, cook the liver for 10 minutes, then when cooled, you can fry them or not, cut into small cube forms and set aside in a bowl. Shrimps, crayfish are a perfect substitute for the liver
• Parboiling the rice then drain the excess water by sieving it in order to reduce the starchy content of the rice which makes the rice to clump together when cooking.

• Place the carrot and green peas in boiling water for 5 minutes and strain out then allow it to cool off and set aside in a bowl with the diced (cubic) liver. Cut the carrot into tiny cubic forms.
Finally,
• Place the chicken stock into a large pot and boil it at the same level with the rice, so that it dries up completely with the rice as it is done. Add water to the stock if it is not enough for the rice
Note as the stock begins to boil add the parboiled rice, seasoning/stock cubes, curry powder, garlic powder, onions and salt to taste, cook on medium heat until its ready, then set aside in a pot.
Note also that the cooked rice shouldn’t be soggy or sticky.
• Heat up the vegetable oil, add the carrots, peas, the diced bell green pepper and the diced liver or alternatives such as shrimps then add a little black pepper, a little garlic powder, curry and seasoning cube to taste and mix to stir fry for 1 min then pour into a bowl.

• Add the already stir fried vegetable with the cooked rice into a frying pan and stir fry for about 2 minutes. And you are ready to serve and eat your “fried rice and chicken”!.
Note that fried rice are to be eaten immediately and can't be stored for a long amount of time if not it is going spoil. Also, you can also add fried diced plantain, to eat with it if you like. There are many flavors and types of fried rice you could cook aside this particular one.
