Fruits and Veggies Monday Week #59 | It’s a Wrap! Black Bean and Corn Salad with Roasted Peppers

Week 59 and here we are my Fruits and Veggie friends!

It’s @lenasveganliving’s Fruits and Veggies Monday! As you know it’s all about healthy fruits and veggies! Dear Lena has created such a wonderful community over the past year with her beautiful nutritious recipes.


As I thought about what I would share with you this week I realized I had a couple of ears of corn from dinner last night. It triggered an idea about a favorite lunchtime wrap which I love which can also be eaten as a salad.


(Or… standing with a fork in front of the fridge which I might or might not be guilty of doing).


You know, it’s one of those salads you just can’t get enough of.. it’s not too filling, but the vegetables are so good for you! I thought today would be a perfect day to share this recipe with you!

It’s a Wrap! Black Bean and Corn Salad with Roasted Peppers

  • Organic Black Beans- (15 oz drained and rinsed)
  • Organic Black Olives- (1/4 cup sliced)
  • 2 Cooked and buttered Ear of Corn
  • Small Red and Yellow Peppers- Qty 7
  • Cilantro- ½ cup chopped
  • Large Red Onion- (1/2 chopped)
  • Fresh Garlic Clove- Qty 2 (minced)
  • Extra Virgin Olive Oil
  • Sriracha Sauce
  • Avocado- Qty ½
  • Cucumber- Qty ½
  • Sprouted Wheat Wraps

I roasted the peppers after slicing and washing them, placing them in a baking dish, adding minced onions, pepper, salt and drizzling with Olive Oil. This really adds an amazing flavor to the salad. Bake at 375 for about 25 minutes. Set aside to cool.

Slice the corn off the ear of…of course you can close your eyes and take a bite, love that buttery sweet taste don’t you? Makes you feel it’s summertime!

Grab the fresh Organic Black Olives and slice away!

Slice the cucumbers to add a nice refreshing crunch, and don’t forget the Avocado! Set these aside for now.

Grab your favorite bowl, wash and drain the black beans (unless you have cooked them from scratch…which kudos to you on that!) and mix everything but the avocado and cucumber together. Don’t forget the Sriracha sauce…..come on, more is better!


Lay out the wrap, position the cucumbers and avocado slices liberally and cover with the Black Bean Salad. If you’re feeling daring….sprinkle more sriracha!

Now Wrap it! Have a seat, and Enjoy!

I hope you’ll try it! Full of healthy fats and fiber with a spicy kick! This is quick to make, and keeps in the fridge. That is if it lasts that long lol

@birdsinparadise, who said vegan cannot have healthy food. They were wrong. Black beans very good to our health. Chinese believe that black bean for grey hair, good for our kidney and good for people who has water retention problem.
I like wrap very much and always wrap with vegi and meat slice :p. After saw what you have posted. I like wow, it sooo delicious, i like avocado and sweet corn very much. I didn't knew that black bean can be part of the meal :P. It was easy to prepare and healthy. Thank you for the step by step on how to prepare it. It detailed and easy to understand.
Definitely will give it a try after i grab all the necessary ingredients.

My Wife used to love them, ( she cant have them or most spicy foods now) but I just never liked them myself

I would probably eat at least three of these, lol. Absolutely my kind of lunch and I am thinking that I will make something similar with black beans soon. I also love those little peppers, they are delicious cooked or raw. I buy them all the time. Well done my Dear 🍒 🍌🍑🌿🍍🍓🍇
