Flashback to the 70’s my Steemian Foodies!


For those of you who weren’t born yet….just bear with me! Week 33 Cook with us Challenge is…


Take Out Food!


Before I get started I want to give a big thanks to @chefsteve, @offoodandart and @pandamama for continuing to host this venue. I think I can safely say you raise the bar each week! When I read the theme this week I thought about all of the types of takeout food, there are so many! It would be difficult to choose!


Funny though, what did come to mind was the takeout food we used to have while we were in college. Of course Pizza was a staple and there weren’t many “fast food” spots at that time. (I know, I’m dating myself! Lol) Being poor college students, it was always a huge treat to have any take-out foods!


There was one place Mr. Bird and I used to stop in, order and take out to sit and talk in between classes. They served everything “Pizza-ish” …and it was within walking distance to campus. Complete with Italian sausage, salami and pepperoni and of course lots of cheese….much better than dorm food! They served up this special sandwich wrapped in parchment and foil complete with chips on the side. I thought this sweet sandwich would be a good choice to share this week!

The Bird’s Campus Stromboli!


Bread Dough

  • Flour (2 cups)
  • Water- lukewarm (3/4 cup)
  • Dough Improver (1 tbsp.)
  • Yeast (1 ½ tsp)
  • Olive Oil (1 tbsp)
  • Sea Salt (1 tsp)
  • Baking Soda (1 tsp)

The bread used for this sandwich is somewhere between a bread and a pizza dough. Just as I remembered. Light, but a bit crusty like a typical pizza. Mix all ingredients until smooth. Let the dough rest at room temperature for about 30 minutes. Then roll out into a rectangle and let the dough rest for another 20-30 minutes.


Meanwhile…let’s make the sauce!


Sauce

  • Diced Fresh Tomatoes (4 cups)
  • Garlic Cloves (3 minced)
  • Fresh Basil (5 leaves chopped)
  • Sun Dried Tomatoes (3 tbsp. chopped)
  • Extra Virgin Olive Oil (1 tbsp.)
  • Red pepper Flakes (1/2 tsp
  • Sea Salt and Pepper (to taste)

  • Chop and mince vegetables.

  • Place everything in your food processor and process until you reach your desired consistency. If you like chunky, go for it! Smooth? Pulse a bit longer. Set aside.

Sandwich

  • Italian Sausage (1/2 cup)
  • Pepperoni (8 slices)
  • Salami (8 slices)
  • Fresh Onion (1/2 cup)
  • Fresh Yellow Peppers (3 sliced)
  • Bella Mushrooms (3 sliced)
  • Fresh Mozzarella (2/3 cup shredded)
  • Nutritional Yeast (2 tbsp.)

  • Cook the Sausage, drain well.
  • Wash and slice the Onion, Peppers and Mushrooms. Saute all and set aside.

Now it’s time to assemble!


  • Spread the Sauce over the top of the dough, leaving about 1/2 “around the edge of the dough
  • Now sprinkle the cheese,
  • Add the remaining ingredients and top with a sprinkle of Nutritional Yeast. I think we’re good to go!

Roll the sides up over the top of the filling and pinch at the center. Do the same with the ends, rolling up and sealing. Now place the Stromboli seam-side down on a lightly oiled pan. Slice three diagonal slices on the top. Lightly brush with Oil and bake in a 450 degree oven for 20-25 minutes.

Enjoy! Certainly a flashback Take-out for the Birds!

This takes me back to my childhood in the 80's and my mother would always make a stromboli like this for all of our family parties and holidays. I loved eating stromboli then and I still do now! Thanks for taking me down memory lane! Thanks for a wonderful entry!

You amaze me with all of your homemade breads, tortillas, pizza dough things. How do you do it? These lunches you conjure up sure are fancy in a not so fancy way. Haha… bravo @birdsinparadise. You change the game just by being in it :)

Aww...I'm sure you could easily do the same...wish I could master the gluten free breads, I need those for my daughter and son-in-law...those are tough! Looking forward to your FFF post! :) You bring such joy, I so enjoy your cooking, I would imagine your kitchen is filled with laughter and smiles!

The gluten free breads are tough. I’ve been playing around with them a bit and it all depends on the flour. I think your best bet is probably mixing your own over store bought. Substituting things like lentils, potatoes, or gluten free oats has proved to make some yummy breads/tortillas. 🤷🏼‍♀️

That looks really delicious. Can't find that kind of food here where I'm living. I sure miss that kind of food.

Your bread alone made me hungry. It came out perfect! Then add all those wonderful goodies inside that make a delicious stromboli ... yumm all the way. Oh, plus chips. Love take-out with homemade goodness! If this is take-out, I wouldn't mind having it more often than once a week!
