Coto Makassar

Coto Makassar is one of culinary originally Indonesia, a typical dish from the city of Makassar, South Sulawesi. Coto Makassar is different from soto from other cities in Indonesia. It is because the sauce of Coto Makassar is made of rice washing water with peanuts that is crashed using a pestle until smooth and other spices such as galangal, lemongrass, ginger, bay leaf and flavor. Therefore Coto Makassar has a more condensed sauce than the others soto sauce. The contents of Coto Makassar are beef and innards that is boiled long enough so that the meat becomes more tender. Coto Makassar served in a bowl and eaten with ketupat (Ketupat is food consisting of rice boiled and wrapped with young coconut leaf), and add with soya sauce and chili sauce as to taste.
