Recipe: hot mushroom pan
hot mushroom pan
servings:
4 portions
ingredients
1 big onion
1-2 toes of garlic
1-2 Hoschis Vietnamese chilis or others (can be more for the super hot ^^)
fresh forest mushrooms (chestnut mushroom, birch red cap, boletus, parasol etc)
cherry tomatoes
1/2 liter vegetable broth
White wine semi-dry or dry
cream
salt
pepper
Butter and oil
Manual:
1 Cut the onion.
2 Chop the garlic and chilies small.
3 Clean the forest mushrooms and cut into pieces, halve the cocktail tomatoes.
4 Heat oil in a frying pan and sauté the onion with garlic and chili, add the cocktail tomatoes and sauté for a short time.
5 Then melt two good tablespoons of butter in the pan and add the mushrooms.
6 Everything swirls through, when the mushrooms have nicely absorbed the butter and it begins to taste deliciously mushrooms, with a generous dash of white wine (pour a glass full, because the bottle is already open anyway ^^)
7 Let the whole reduce and then fill up with the broth.
8 Cook it over. Pour in about 100 ml of cream at the end and season with salt and pepper.
As a side dish I would serve noodles or spaetzle.
Holy cow that looks good. I may have to try that or something like it today.
Reminds me, I have some cabbage that I should saute. Don't laugh if you haven't tried it :)
Thanks for a great recipe!
