Fast Vegetable Casserole With Creamy "Cheddar" Sauce 🧀 🌱

Some time ago, the internet shuddered from astonishment, when people heard about cheese from potatoe. That's right! It kinda looks like melted cheddar. It's really delicious and even better than "normal" cheese, and above all cruelty-free. Great as a dip, sauce, and if you'll refigerate it, you can grate it and add on pizza! You can prepare it in thousands ways, with others spices, even with herbs if you like "herbal cheese". I'm pretty sure that most people heard about this kind of vegan chesse, but I think there is also a group of people, which didn't heard about that. Don't worry! It's not so tricky!
Despite appearances, vegan and plant-based cuisine is really easy! 😊


Few days ago I made great casserole with vegetables and exactly with this addition as a creamy sauce. I love roasted veggies, so for me that dish was great for dinner, and lunch, okay and for snack. 😅😋
I made really big portion, so I shared this meal with my boyfriend, mom and sister. Everyone said that, the dinner was fantastic. Maybe because, if someone prepares something to eat for you, you really enjoy the taste from the get go. 😄


For preparing you will need:
for cheese

  • three medium size, boiled potatoes
  • two medium size (or one big), boiled carrots
  • three tbsp of nutritional yeast (for cheesy flavour)
  • pinch of salt
  • a bit of pepper
  • 1/4 tsp of white pepper
  • 1/2 tsp of smoked paprika
  • two tbsp of oil
  • one tbsp of apple vinegar (optional)
    veggies
    feel free to use your favourite mix, I choose:
  • three big potatoes
  • two carrots
  • one little cauliflower
  • zuchhini
  • red onion
    feel free to add variety of dry herbals like:
  • basil
  • oregano
  • herbs de provance
  • Italian mix of herbs
  • savory
  • ground pepper

Preparing

  • into blender, put all ingredients for cheese and blend it preciselly
  • chop in slices veggies
  • boil potatoes, carrots and cauliflower in little salty water, till they'll be soft
  • place all veggies in casserole dish and by hands mix them
  • sprinkle veggies with dry herbs
  • pour the creamy, cheddar sauce on veggies and mix
  • bake in oven at 180°-200° C with air flow about 30-40 minutes
  • take a portion and put on top chopped spring onion

I always double the potato cheese recipe it keeps pretty well in the fridge and its great for quick snacks, such as grilled cheese and tomato sandwiches.

Yeah, I need to try this with Tapioca starch, and then I will be able to chop it in slices, I guess.
Idk, need to try some experiments with it :) But anyway, next time I also will do double portion of this cheese ;)

I use arrowroot flour its like a thick sauce I haven't tried to make something that is thick enough to slice but I might think about that. Thanks.
