Passend zur Jahreszeit ein Dessert aus Waldmeister, Himbeere und Champagner

A dessert made of woodruff, raspberry and champagne to match the season

Das Dessert besteht aus einem Maibowlen-Geleewürfel in dem sich mittig eine Himbeere befindet. Zusätzlich habe ich eine Waldmeistercreme, Himbeerekonfit und Champagnerparfait in jeweils eine große und eine kleine Halbkugel gefüllt und dünn mit weißer Schokolade überzogen.

The dessert consists of a Maybowlen jelly cube with a raspberry in the middle. In addition, I filled a woodruff cream, raspberry confit and champagne parfait into a large and a small hemisphere and covered them thinly with white chocolate.


Abgerundet wird das Ganze mit etwas Himbeer- und Champagnerpaste, einem Waldmeisterkaramellgitter, ein wenig Kresse und sowohl getrockneten als auch frischen Himbeeren.

Round it off with some raspberry and champagne paste, a woodruff caramel grid, a little cress and both dried and fresh raspberries.

Kleiner Tipp zum selber machen:

A little tip to do it yourself:

Karamellgitter sind in dieser Art sehr schnell und einfach zu machen und pimpen ein Dessert sehr gut auf. Einfach ein Bonbon mit Geschmack deiner Wahl nehmen, im Mixer zu Pulver mixen und dünn auf ein mit Backpapier belegtes Blech streuen. Dann im Backofen bei 180°C kurz anschmelzen lassen. Nach dem abkühlen in kleine Stücke brechen.

Caramel lattices are very quick and easy to make in this way and pimp a dessert very well on. Simply take a candy of your choice, mix in a blender to powder and sprinkle thinly on a baking tray covered with baking paper. Melt briefly in the oven at 180°C. After cooling, break into small pieces.
