Smores Cookies

To make about 28 S'mores cookies, you will need: ten graham crackers (Speculos, Petit beurre or Bastogne) a cup of all-purpose flour, half a teaspoon of yeast, half a teaspoon of baking soda, a quarter of a teaspoon of salt, half a cup of softened butter, two thirds of a cup of brown sugar, a third of a cup of sugar, an egg and a teaspoon of vanilla extract. You will then need five cups of small marshmallows.

For the melted chocolate, gather the ¾ of a cup of milk chocolate chips, three tablespoons of butter, and finally a tablespoon of water.
Start by preheating the oven to 180 degrees.
Crush the cookies in a blender for about one minute.
In a bowl, combine cookies, flour, baking soda, baking powder and salt and set aside.
In a blender bowl, whisk butter, brown sugar and sugar until light and fluffy for about three to four minutes.
Then add the egg and vanilla.
Gradually add the cookies and flour mixture and beat slowly until the dough is smooth.
Using a tablespoon, each time take a little dough, then form balls that you put on a greased baking sheet or parchment paper.
Slightly flatten the dough balls and bake for 9 minutes. Then remove them from the oven and let them cool.
Meanwhile, generously butter a baking sheet and place the marshmallows on top before baking. Let them fry for 30 seconds to a minute, but watch carefully so they don't burn.
Then remove the baking sheet from the oven and place several marshmallows on each cookie.
In a bowl, put the chocolate chips, butter and water. Place it in a microwave and stir every 30 seconds until everything is melted and smooth.
Using a spoon, drizzle the cookies and marshmallows with chocolate.
Here you go, your S'mores cookies are ready to be enjoyed at your brunch with friends. Treat yourself and above all... Stay " brunched " !
