Lemon Drizzle Cake - Made with Oat Flour!
Lemon Drizzle Cake
Tastes delicious and it's loaded with protein and Vitamin C.
I use the Oat Flour for this cake therefore it's loaded with nutritions.
If you don't have the time to eat your breakfast in the morning, this is a quick way to "take and go to work" option. It will fill you up for some time however it will not substitute for a healthy breakfast.
This lemony loaf cake is both sour and sweet at the same time :)
Ingredients:
- 1 Tbs butter, for greasing
- finely grated zest of 1 unwaxed lemons
- 1 cup of softened butter
- 3/4 cup of brown sugar
- 3 large eggs
- 2 cups of oat flour
- 1 1/2 tsp baking powder
- 2 tbsp milk
- juice of one lemon
- 1/3 cup of confectioners' sugar
Start by softening the butter in the mixing bowl
Next add sugar and lemon zest
When the mixture is nice and fluffy beat in the eggs. One at a time.
Fold into the mixture: flour mixed with the baking powder
Next place the mixture in the greased loaf of pan and place it in heated oven to 350F
Bake for 45-50 minutes
Mix the lemon juice with the confectioners sugar in the bowl
Once the cake cooled, drizzle the sugary mixture onto the cake
It's time to eat it ..... :)))
I like to serve it with some fruit
And top it with a low sugar jam from my own production :))

I enjoy your progress photos. I am a self admitted photo snob ( it's a problem, I'm not proud of it ) so I rarely do progress photos because I can't control the lighting and I only use natural lighting. So, when I see others doing progress photos, I see what I'm missing out on. I like your idea here using the wheat flour. Keep these coming.

I'm in Bangkok where all the baked good are either way over sweet or deep fried, or terrible and toxic. I can't eat any of it; and I have no kitchen. So no bread for over a year now.
