A Breakfast Bowl: Sweet Potato Noodles with Sausages, Eggs and Asian Veggie

Breakfast with a bowl of bright colors you can prepare to start a new day. This does not mean you need extra time.

You can prepare this a breakfast bowl in under 10 minutes.

This breakfast bowl contains stir-fried sweet potatoes with a texture like noodles with Asian vegetables 'Pakcoy / Bakcoy', which are then added with eggs and fried sausages.

It doesn't take long to stir fry sweet potatoes and pakcoy, this is to keep the texture of these vegetables fresh and the texture isn't too soft so it tastes good.

The spices that I use are still simple namely garlic, onion, chili, pepper, salt, and bay leaf.

Cooking Instructions

  • Step 1
    Peel sweet potatoes.

Then make the slices using a potato peeler so that the shape of the slices such as noodles, even not like 100 percent the same shape.

So you should use sweet potatoes that are elongated in shape so that the slices are more similar to noodles.

Then wash the sweet potato slices clean.

Also, don't forget to cut complementary veggie. In this recipe I use Pakcoy. You can replace with other green vegetables that you like.


  • Step 2
    Chopped red onion, garlic, and chili.

  • Step 3
    Before cooking stir-fried sweet potato noodles, you should use a cooking pan to fry sausages and eggs first.

After the sausages and eggs are finished cooking, then proceed to cook sweet potato noodles.

Heat the oil. Then saute onions, chilies and bay leaves until fragrant. Add salt and pepper to taste.

Add sweet potato noodles and vegetables. Mix well for a while. Then add a little water, and cook for about 5 minutes.

Remove, and serve in a bowl with sausages, eggs, and complementary vegetables.

In my opinion the preparation while cooking this breakfast bowl menu is not difficult at all and is worth your try.

The Good News!

You can replace sweet potatoes with potatoes! You only need to slice the potatoes with a potato peeler.
