Blue meat
The Blue Lingcod is a fish of the greengram family Hexagrammidae. It is the only existing member of the Ophiodon genus. It is native to the west coast of North America, from the Shumagin Islands in the Gulf of Alaska to Baja California, Mexico. It can reach a size of up to 152 centimeters and a weight of 59 kilograms. It is observed in various shades of gray. About 20% of the lingcods have greenish-blue to turquoise flesh. The color is destroyed when cooking. It is mentioned that the color may be due to biliverdin, but this has not been officially established. Leaving the cause of its coloration in doubt.
