Stuffed sticky rice balls (Vietnamese Cold Food Festival) recipe.

Stuffed sticky rice balls are the traditional dishes of the cold food festival in Vietnam on the 3rd of third Lunar month each year. It is made of bits of brown sugar wrapped in rice flour and cooked by scalding in boiling water.

Ingredients.

  • 200 grams of glutinous rice flour.
  • 20 grams of rice flour.
  • 150ml of warm water.
  • 700ml of cool water.
  • 300ml of cool boiled water.
  • A few drop of food coloring (orange, purple, green and yellow).
  • 1 pack of brown sugar in cubes.
  • Sesame seeds.

Instructions.

  • In the large bowl, combine glutinous rice flour, rice flour, add slowly warm water and mix well. Knead well for about 10 minutes till have a smooth and dough, not wet in sticky, let the dough rest for about 30 minutes.
  • Divide dough into 5 equal portions.
  • Add each portions with a few drops of the food coloring.
  • Knead each portions till colour is well distributed.
  • Dough and divide each portion into small nice balls. Put each cube of brown sugar into one ball, and enclose the dough so that the cube of brown sugar will be entirely covered by the flour.
  • Repeat the same with the orange, purple, green and yellow dough.
  • Bring 700ml of cool water to a boil in a pot over medium heat. Add the balls, bring to a boil again till they float to the surface.
  • Remove cooked balls with a kitchen sieve. Then drop the cooked rice balls into a bowl of cool boiled water for about 1 minutes.
  • Drain and place in the dish. Put sesame seeds over the balls.
