Toasted Quinoa Salad with Avocado, Red Beet and Orange

A colorful summer-inspired meal that will tickle all your senses! If you never toasted quinoa before, then I can highly recommend it! It tastes so much better and different than cooked quinoa.

Toasted quinoa has this deep nutty flavor which is just yum! The perfect addition to any salad to add some crunch and flavor!

Make sure to toast the quinoa long enough or otherwise it will just taste like normally cooked quinoa. You'll see and smell when it's ready ;) The nutty flavor and aroma are so amazing!

Ingredients (serves 2)

For the dressing

1/2 cup cooked quinoa
1 avocado, cubed
1/4 cup finely chopped spring onion
2-3 cups salad green f your choice
1 orange, peeled and chopped
1 cup raw red beet, julienned (about 1/2 big red beet)
2 tbsp unsalted sliced almonds (optional)

For the mustard orange dressing

0.5-1 tsp grated orange zest
1 tbsp fresh orange juice
1 tsp mustard
2 tbsp extra-virgin olive oil
1 tbsp walnut oil or more olive oil (avocado or other oils work too)
black pepper to taste

Directions

  1. Cook the quinoa according to the instructions on the package.
  2. Combine all salad ingredients in a bowl. Toss to combine. Set aside.
  3. Whisk together al dressing ingredients. Set aside.
  4. To toast the quinoa, toss cooked quinoa with olive oil. Season with salt and pepper. Place in hot skillet or wok and toast until fragrant and slightly dried out. This will take 5-10 minutes.

Yummy! Never tried Quinoa before though.

I love it! Especially when toasted. you can use it instead of rice to to make fried rice too! Yum! I cook it for you one day ;)
