Herb-infused Greek Quinoa Salad with Feta Cheese
Quick. Healthy. Delicious. Who's up for a refreshing Mediterranean-inspired dish? This herb-infused Greek quinoa salad is the perfect vegetarian summer lunch or dinner!
Ingredients (serves 2)
For the salad
1/2 cup uncooked quinoa (we used tricolor quinoa)
1/2 cup sliced red onions
1 cup diced cucumber
1/2 cup diced tomatoes
3-3.5 oz crumbled feta cheese
1 cup fresh chopped parsley
1/2 cup fresh torn basil leaves
1/2 cup fresh chopped mint leaves
For the dressing
1/2 lime, juice only
2 tbsp extra-virgin olive oil
Sea salt and black pepper to taste
Directions
- Cook quinoa according to the instructions on the package. Allow to cool.
- Meanwhile, whisk together all dressing ingredients. Set aside.
- Combine quinoa, herbs, crumbled feta, and veggies in a large salad bowl. Toss to combine.
- Add to serving bowl and drizzle with dressing.

Buckwheat is so good. I wish I could find it regularly at my grocery store. Have you ever tried toasted quinoa?
If Amazon delivers to your home, they sell buckwheat there. And yes toasted quinoa is just amazing!
