Hi everyone, hope you're all doing good. This is Amina Safdar writing from Pakistan. Today, i am going to share a traditional recepie of Gram Flour sweet which is native to the countryside of Pakistan.

Gram Flour Fudge/Besan Barfi

This sweet has high nutritional value, because the ingredients are mostly dry fruits. Dry fruits have warm nature which is the reason this recepie can only be made in winters.

Gram Flour Fudge

Without further delay, let's begin with the ingredients first:

Recepie

Step1-Grinding

Take a grinder and add each ingredient individually little by little and convert them into a fine powder.
For walnuts, crush them a little bit using pestle and mortar, then grind them in grinder. I forgot to take the pictures while grinding.

Step 2-Making sugar syrup/ Sheera

Take 1-2glasses of water, add 1kg white sugar. Put them on stove, let the water boil until sugar is completely dissolved in it.

Keep it boiling until you notice that the solution is becoming a little consistent. When you see it turn the flame off.

Step 3-Saute/Fry Gram Flour

You have to fry the gram flour in organic fat over high heat.Until you notice that your flour is changing its colour and turning into light brown in appearance, you gotta keep frying.

You can purchase the organic ghee from market. I made it at home using fresh cream a day before. It was frozen due to winters, so i just put it on the stove to liquify it.

Adding fat into flour

You'll see a smooth yellow paste(yummy), but you're not done yet. Keep stirring and let it get as smooth as shown in the pictures.

Step 4-Mixing Dry Fruits

Mix the dry mixtures into the smooth batter. Mix it slowly and smoothly, It'll turn into a fine brown solid.

Step 5-Adding Sugar syrup

Add sugar syrup in the mixture and mix it immediately to avoid the clotting.

Put this mixture into containers and keep it overnight to let them get a little hard (to cut down by knife).

Freshly cut

Next day, cut it horizontally and vertically according to your desired shape and size.

Eat them as a snack in the evening or morning with tea or coffee:)
