Recipe of the Day, Week No. 54: (Eggs and Fried plantains)
Hii chefs!
It's yet another cooking contest again. I prepared ripe plantains and fried egg for breakfast this morning and I'm delighted to share it through this contest.
Ripe plantains and eggs are really nutritious and they are also easy to prepare.
INGREDIENTS
Eggs
Vegetable Oil
Onions
Peppers
Tomatoes
PREPARATION STEPS
Prepare the plantains. Wash the plantains thoroughly, then peel and slice them.
Season the plantains, sprinkle a pinch of salt and make sure it goes round by tossing it in an up and down movement.
Chop the veggies, prepare everything to be used, slice the onions, peppers and tomatoes and keep it aside.
Then, break the eggs and whisk them, add pepper, salt and some onions together.
Set the frying pan on fire, add the vegetable oil and begin frying the plantains.

After frying the plantains, add the tomatoes and onions and fry inside the oil used for the plantains, keep stirring to mix with the oil for one minute. Then, add the eggs inside and fry them

Plantains and eggs are ready to be served.
This recipe is a very good breakfast combo that's both easy to make and is also packed with nutrients. The ripe plantains were sweet while the fried eggs provided a protein boost. I hope you enjoy this recipe!
