PUMPKIN COOKIES - VIDEO
Delicious soft and puffy pumpkin cookies with a hidden cream cheese centre. These pumpkin cookies are something different and great for after school with a big glass of milk. Enjoy these treats as the autumn weather arrives, as well as through the holidays. They are always a hit, especially around Halloween and Thanksgiving! These cookies can be stored in an airtight container at room temperature for up to 5 days.
Ingredients :
For the cookies:
280 gr OR 2 cups all purpose flour
1 tsp. baking powder
½ tsp. salt
1 tsp ground cinnamon
¼ tsp. freshly-ground ground nutmeg
125 gr OR 1/2 - cup unsalted butter, at room temperature
125 gr OR 1/2 cup granulated sugar
125 gr OR 1/2 cup pumpkin puree
Half large egg
1 tsp. vanilla extract
For the cream cheese filling:
125 gr OR 1/2 cup cream cheese, softened
4 tbsp icing sugar
1 teaspoons vanilla extract
Cinnamon-sugar coating:
70 gr OR 1/4 cup granulated sugar
1 tsp. ground cinnamon
½ tsp. ground ginger
