ORANGE CHEESECAKE BOMBS
Its all about good recipes, and about quality home cooking that everyone can enjoy. This no bake orange and chocolate cheesecake is so amazing. Not only does it look fantastic, but it tastes so incredible, a bit like jaffa cake! Enjoy this super easy, but stunning dessert!
Ingredients for the cheesecake
4-6 biscuits Oreos & digestive cookies ( any biscuits you like)
100 grams of dark chocolate
140 ml of double cream or whipping cream
50 gr of icing sugar
200 grams soft cheese (full-fat, such as Philadelphia)
125 grams mascarpone cheese
40 ml of orange juice
1 tbsp grated orange zest
Orange food colouring (optional)
1 tsp of orange extract or orange liqueur
1 tbsp cocoa powder
1 x 135g or 1 packet of orange jelly
125ml of boiling water
For the mirror glaze
Ingredients
150 gr glucose syrup
150 gr granulated sugar
75 gr Water
10 gr gelatin
75 gr Water for gelatine
100 gr condensed milk
150 gr white chocolate
Orange and Black food colouring
1 tsp of titanium dioxide ( optional, white food colouring powder)
Directions
Step 1 : First make your orange jelly. In a jug add your jelly with hot water, stir until it completely dissolves and then add the jelly into a cake tin. Place in a freezer for at least 30 min so it sets faster.
Step 2 : Make your cheesecake. In a bowl, add your cream cheese and mascarpone cheese. Then add icing sugar, vanilla extract and mix everything until smooth. Add orange juice and extract and mix again.
Step 3 : Divide the mixture into two bowls.
Step 4 : Then add dark melted chocolate into one bowl with cocoa powder and mix everything. Step 5 : Add 1 tbsp of orange zest and orange food colouring into the second bowl. Mix until you get your desired colour.
Step 6 : Take your jelly out and cut out little circles which will fit into your mould. I used a round silicon mould, feel free to use any mould you have. Start with orange cheesecake, press it down and place in a freezer for 1 hour.
Step 7 : Then add your jelly on top, followed by chocolate cheesecake. Press it down so its filled up. Using a spatula get rid of any excess. Then add crushed cookies on top and press inside.
Step 8 : Place your cheesecake bombes into the freezer for at least 6 hours.
Step 9: Make your mirror glaze, let it cool to the right temperature and pour over each cheesecake bombe. Decorate the way you like and place them back into the fridge for at least 30 min to defrost completely before eating. Enjoy!
