Chicken alla diavola
The puppy of the devil is very simple to make and so crunchy that even worth trying at least once, if you have not done it before, of course. Although the chicken is wonderful when preparing it on the grill in the yard, it is absolutely delicious even the one in the house. I make it very often on the grill, at the stove, and beside cold chicken and a few slices of red potatoes and red onions. It is a perfect dish for the weekend, so if you have a chicken through the refrigerator, tomorrow or in the morning, I invite you to prepare it after this recipe.
Chicken alla diavola - Ingredients
1 small chicken (about 1 kg)
2 tablespoons olive oil
1 teaspoon of lemon juice
1/4 teaspoon chilli flakes
salt
fresh black pepper
1 tabasco drop (optional)
Pui alla diavola - Preparation
Remove the chick and neck of the chicken, wash it, wipe it very well, split it on the chest and open it in two (as if I open a book).
In the original recipe, the chicken split on the back, but I always split it on my chest.
We put it on a wooden shredder with the side cut down and flatten it as much as we can (I use a stainless steel flat plate, but when I do not find it in the drawers, I use my hands).
In a small bowl, mix the olive oil with lemon juice, chili pepper, salt, fresh pepper and, if you want, a drop of tabasco. Tabasco is very fast, so I recommend you not to put more than one drop.
We anoint the chicken, on both sides, with the emulsion obtained. We anoint the grill with 1 teaspoon of olive oil, and put it on high heat.
When it is very hot, add the chicken, with the side cut in contact with the hot grill.
We placed a smaller cap over the chicken than the grill, and above the lid a weight. I used the mortar, and in it I put a big can.
We chicken the chicken in medium heat, 50 minutes (for a 1 kg chicken, we need about 50-55 minutes). During the baking process, we turn the chicken from one side to the other in 5 minutes.
When it was beautiful on both sides, we put out the fire and taste it with lust. We with potatoes and red onion roasted on the grill. It's not a combination, but the rules still have to be broken from time to time and that's really a very tasty occasion, I guarantee you.
