One of the most inviting products of the ancient gastronomy of Palermo is the famous sfincione.
A high and soft focaccia welcomes a dressing consisting of simple ingredients such as onion, anchovies and a large quantity of oil e.v.o. which, thanks to the spongy consistency of the pasta, is absorbed almost entirely.
The classic sfincione prepared in Palermo also includes tomato sauce and caciocavallo, but as soon as you leave a few kilometers you can taste the typical variations of the neighboring countries. It is only a rustic food, but the sfincione takes on a strong identity value for the population of the whole Sicilian province.
The white sfincione, without the sauce, but with the characteristic addition of ricotta is the version proposed by the Bagheresi, which for promoting their recipe they have already organized three editions of the "Sfincione Fest" and aspire concretely to obtain the coveted d.o.p. brand.
In addition that in some historical places and in all bakeries, in Palermo it is possible to make a tasty snack by purchasing a portion of sfincionello also near the street vendors who carry the smelling street food in small carts in front of the schools or around the local markets.
The long exposure of the food on temporary open-air stalls is at the origin of a famous dialectal expression that kindly insinuates the suspect that the sfincione bought on the street is "scarsu r'uogghiu e chinu ri pruvulazzu!", that is with little oil and powder door.
Once, on holidays, preparing a sfincione tray at home was an experience that made the members of the whole family proud.
