Shadow of the Colossus - is a classic for a reason. It's a very simple premise. You are a lone wanderer who is tasked with slaying Giants in a large open world. You have your horse, you have a bow, you have a sword, that's about it. It sounds really simple but just from the story, the visuals, the music, the sense of loneliness and the fun gameplay of fighting these monsters it really just makes it a satisfying gameplay experience action-adventure games anything from Zelda to anything else in between.
I think you should consider Shadow Colossus if you haven't already.
