Carbonara - Filipino Version (Step-by-step Procedure)

Carbonara - Filipino Style

Technically, this is not the traditional Carbonara from Italy which only has a very few ingredients and simpler to make. This Filipino recipe is still very easy but has more ingredients and is creamy. Many Italians do not approve of using the term "Carbonara" to refer to this dish but it is already being used by Filipinos around the world. I can alternatively name it, "Bacon and Mushroom Creamy Pasta". How does that sound?

I'll be sharing how it's made. This is very easy even for those who haven't tried cooking before. I specifically made this article for @mutitum's Steemit Food Contest.

Ingredients

1/2 kilo packaged Fettucine or Spaghetti
200 grams bacon bits
200 grams button mushrooms, sliced
250 ml cream of mushroom soup
280 ml cream
1/2 cup Parmesan cheese
1 large onion, chopped
4 cloves garlic, chopped
salt to taste (optional)

Procedure

  1. Fry the bacon bits on low heat until golden brown.

  2. Discard the oil leaving about 2 tsp to saute the garlic and onion. Place the cooked bacon on a paper towel for the excess oil to be absorbed.

  3. Cook the pasta according to package instructions (This can be done simultaneously when cooking the bacon).

  4. Use the excess oil from the bacon to saute the onions and garlic.

  5. Add the mushrooms when the onions are soft and cook for a minute or two.

  6. Pour in the mushroom soup and mix well.

  7. Pour in the cream and mix well.

  8. Add the Parmesan cheese and bacon leaving some to sprinkle on top for a nice looking presentation. Add salt to taste.

  9. Mix the pasta with the cream mixture and serve.

Serving

For a group, use a ceramic container and sprinkle bacon bits and parmesan cheese on top. It's even better to have it sprinkled with some herbs.

For a single person, just get enough for one serving, twirl the pasta around before sprinkling with the bacon and cheese.

Ohhh I make this as well and I love the creaminess. Some would use eggs though for the creamy texture.

OMG! Even though it may not be the original, this took me back to childhood when my favorite food (the food I'd request on my birthday!) was carbonara. And this was so easy, a beautiful post with beautiful photos. Loved it!
